As the temperature drops, Underground Dining at Seppelt offers an experience that fuses history with refined hospitality. Each event begins above ground with a glass of Seppelt sparkling at the Shaft House, before guests descend into the Drives for a guided tour of these historic cellars.
Underground, Executive Chef Bryden Buckingham leads the way with a three-course menu that speaks to the season – dishes that balance richness and restraint, each one paired with wines from our extensive portfolio. In the quiet calm of the Drives, winter’s chill fades and the connection to place deepens.
As the evenings draw in, Salingers Café transforms. Salinger Sessions brings a fresh, confident approach to winter dining – no set list, no fuss, just plates that let the season and the produce do the talking.
Paired with Grampians wines by the glass and a soundtrack that’s all about slowing down, Salinger Sessions is the perfect place to settle in and let winter work its quiet magic.
