Meet the Chef Beneath the Surface
Bryden Buckingham is the Executive Chef at Seppelt Great Western, leading a bold new chapter in the winery’s culinary journey. Known for his produce-led, seasonal approach, Bryden brings both creativity and a deep respect for regional ingredients to every dish.
Having trained in some of Victoria’s most respected venues and worked alongside a two-hatted chef, Bryden has built a reputation as one of the state’s most exciting emerging talents. His focus on sustainability, low food miles, and honest, flavour-driven cooking aligns beautifully with the values of Great Western.
Through carefully curated menus and immersive dining experiences, Bryden is helping to shape Seppelt as a true food and wine destination at the heart of the Grampians.

Underground Dining Experience

Your evening begins with a sparkling wine tasting and a shared grazing board at the Seppelt Cellar Door, setting the tone for an unforgettable experience. From there, embark on a guided historical tour of the iconic Seppelt Underground Cellars. Along the way, pause at our Sparkling Wine Tasting Station, perfectly positioned at the walkway into the cellars, to enjoy another taste of Seppelt’s celebrated wines. The journey culminates in your underground dining space, where you’ll be seated for an exquisite three-course meal paired with Seppelt’s Foundation Range Wines. This unique event runs from 6:00 pm to 10:00 pm and requires a minimum of 12 guests to create the perfect atmosphere for a night of fine wine, exceptional food, and fascinating stories. $195 per person

Embark on a guided historical tour through the iconic Seppelt Underground Cellars, where you’ll encounter three thoughtfully curated tasting stations. At each station, you’ll enjoy a selection of Seppelt Wines perfectly paired with delectable canapés, designed to enhance the flavours of our award-winning wines. Following the tour, you’ll be seated in your exclusive underground dining space to savour a sumptuous three-course meal. Each course is paired with Seppelt Icon Wines, including the highly coveted Show Sparkling Shiraz—a true highlight of the evening. This unique dining experience runs from 6:00 pm to 10:00 pm and requires a minimum of 12 guests to create the perfect atmosphere for an evening of fine wine, exceptional food, and captivating history. $275 per person
