Your evening begins at 6pm in the elegant Shaft House, where a glass of Seppelt’s sparkling wine welcomes you, setting the tone for a night of refined indulgence. This first taste offers a hint of what’s to come—a night that celebrates the exceptional heritage and flavours of Seppelt Great Western.
Next, your host will lead you on an intimate tour of our renowned underground drives, meticulously hand-dug in the 1860s and stretching over three kilometres beneath our vineyards. These historic cellars, naturally cooled to a perfect 16 degrees, provide the ideal environment for ageing wines. As you wander the tunnels, your guide will share the remarkable history of these drives, including their pivotal role in our winemaking processes over generations.
After the tour, you’ll settle into a secluded dining space, thoughtfully set within the heart of the cellars. Here, a beautifully crafted three-course meal awaits, each dish showcasing the best local ingredients and paired with wines from our esteemed Foundation Range. The team carefully selected wine pairings to complement each course, enhancing flavours and offering a true taste of Seppelt’s winemaking expertise.
