Beneath the surface, the Drives stretch out in every direction, where three kilometres of hand-carved tunnels hold more than a century of Seppelt winemaking history. The air is cooler down here. The light is low, flickering against the cellar walls. Somewhere in the Drives, music hums, and the scent of something bold and savoury drifts through the air. Your first glass is in hand before you’ve even settled in, meeting its match in Bryden’s opening street-style creation.

Beneath – The Cellar Session is Seppelt Great Western’s one-night-only, progressive underground dining event. Four sparkling wines. Four street-style dishes, turned all the way up. Every plate by Bryden, every pour perfectly matched, every space bringing its own energy.

Your night begins in the Remuage Room, a glass of Seppelt sparkling in hand, matched to Bryden’s opening creation — rich, fresh, and built for the pour. From there, you set the pace, drifting deeper into the historic Drives. Three more stops await, each a new mood, a new pour, a new hit of Bryden’s fearless flavour. Somewhere ahead, the sound shifts, the pace changes, and you know the Barrel Hall is close.

The trail ends in the Barrel Hall, dessert ready and music live. The bar is pouring sparkling cocktails and wine by the glass, bottles are lined up if you want to take the night home, and the space is yours until you’re ready to step back into the world above.
